Xinomavro Single Vineyard Kayafas 2019
Kayafas is a premium dry red wine from Naoussa (PDO), made from 100% Xinomavro grapes from a vineyard over 40 years old near Trilofos. The vines grow on calcareous soils at an altitude of 180 meters, in a warm Mediterranean climate tempered by winds from the Vermio Mountains. The grapes were destemmed to 80%, fermented with wild yeasts, and macerated for 40 days to develop depth and structure. The wine then matured for 12 months in used 500-liter French oak barrels. The result is a complex and elegant red wine with fine tannins, aromas of red fruits, herbs, and spices, and a long, balanced finish. Ideal for lovers of characterful Naoussa wines from Greece. On the nose, ripe cherries, wild berries, and subtle notes of herbs and spices unfold, rounded off by hints of forest floor and leather. On the palate, it presents itself as medium to full-bodied, with fine, structured tannins and balanced acidity that lend freshness and length. Aromas of plum, cranberry, and aromatic herbs develop harmoniously, culminating in a long, earthy finish. Kayafas shows excellent aging potential and gains in complexity with time.
Food recommendations: Braised beef, such as tender beef cheeks, juicy steak, mushroom risotto, especially with wild mushrooms.
