PET-NAT Roditis BIO 2024
This small-batch wine is crafted from organically farmed grapes grown at 850 meters altitude on non-irrigated bush vines. Using classic white winemaking techniques, only the free-run must is used. A slow, natural alcoholic fermentation with wild yeasts is followed by spontaneous malolactic fermentation.
The wine is bottled unfiltered, unfined, with no added sulfites, and without disgorgement—while still fermenting. At approximately 10g of residual sugar, the fermentation continues in the bottle, creating a gentle, natural carbonation and resulting in a semi-sparkling, semi-dry wine. It matures on its lees for 5–6 months before release, achieving a pressure of up to 3 bars.
The wine shows a hazy yellow hue with charming cloudiness. On the nose, fresh aromas of citrus, apple, floral notes, and hints of freshly baked bread dough. The palate reveals juicy stone fruits, zesty lemon, delicate elderflower, and a smooth, creamy texture with a lingering brioche finish. Subtle mineral undertones add depth and complexity. Its frizzante character delivers a vibrant, refreshing, and textured experience.
Food Pairing: Salty or sweet croissant snacks, Korean fried chicken, Cheese n cured meat platters, Sushi, Thai and seafood.
