Cuvee Speciale Extra Brut 2023
Hand-picked grapes (98% Xinomavro, 2% Assyrtiko) from vineyards at 650 meters above sea level, growing on sandy-loam soils in the Amyndeo Plateau. Gently destemmed, lightly pressed, and fermented under temperature control with minimal sulfur and no chemical additives. Secondary fermentation takes place in the bottle using traditional methods, followed by 12 months of lees aging. An elegant, fresh sparkling wine that combines minerality, fine bubbles, and the unique character of the Amyndeo terroir. Delicate rosé-gold in the glass, with fine bubbles and a creamy mousse. The nose offers saline minerality, citrus fruits, and roses, while the palate reveals freshly picked strawberries. The ultimate "can't-get-enough" wine – juicy, elegant, and with enough complexity and structure to effortlessly accompany a wide variety of dishes. Perfect for moments of pure enjoyment and food pairing.
