Cuvee Rose Extra Brut 2023
This elegant rosé sparkling wine is made from ungrafted Xinomavro vines (98%) with a touch of Limniona (2%), grown at an altitude of 650 meters on the Amyndeo plateau in sandy-loamy soils. The grapes are hand-harvested and gently processed. After a short maceration and temperature-controlled fermentation, the second fermentation takes place in the bottle using traditional methods, followed by 12 months of lees aging. The result is a characterful Brut Rosé with fine bubbles, fresh elegance, and a clear expression of the unique Amyndeo terroir. In the glass, it reveals a velvety rosé color with fine, lively bubbles and a creamy mousse. Delicate chalky notes mingle with wild roses, strawberries, and raspberries – fresh, elegant, and with a long, aromatic finish.
Food pairing suggestions: Perfect with mushroom tart, spaghetti with shrimp and cherry tomatoes, or rocket salad with strawberry sauce and goat cheese.
