Bourgogne rouge AOC 2023

Pinot Noir from three small plots totaling 75 ares, cultivated biodynamically. The vines grow on well-drained, calcareous clay soils near Gevrey-Chambertin. After selective hand-harvesting, the grapes are fermented partly as whole clusters, with gentle extraction and slow, spontaneous fermentation. Aging takes place predominantly in used barriques with a small proportion of new oak. Dark ruby red with a purple rim. Youthful, playful fruit aromas of cherries, wild raspberries, and cassis, complemented by floral notes, vetiver, and a hint of cocoa. On the palate, juicy, lively, and structured, with fine-grained tannins, vibrant acidity, and a long, fruity finish. A small Burgundy full of character and finesse.

Food recommendation: Mushroom ragout, pâtés & terrines, roast chicken with red fruits & tonka bean glaze
