Bio-Wein mit minimaler Intervention, produziert aus einem 16 Jahre alten, nordseitig ausgerichteten Weinberg von 0,7 ha Größe in der Nähe des Dorfes Ano Diakopto. Der Weinberg wird auf lehmigen und kalkhaltigen Böden in 915 Metern Höhe kultiviert, was zu niedrigen, aber qualitativ hochwertigen Erträgen mit ausgeprägter Säure führt.
Es wird ausschließlich der Freilaufmost verwendet, der Wein wird ungeschönt und unfiltriert abgefüllt, mit einer minimalen Zugabe von Sulfiten.
Der Wein hat eine helle, gelbe Farbe und verströmt Aromen von floralen, zitrusartigen und kräutrigen Noten in der Nase. Am Gaumen präsentiert er sich mit einer eleganten Textur, klarer Fruchtigkeit und einer scharfen, markanten Säure, ergänzt durch eine salzige und mineralische Dimension. Der Wein hat ein großes Alterungspotential.
Speiseempfehlung: Er passt hervorragend zu Meeresfrüchten, Austern, Spaghetti mit weißen Saucen, Risotto mit Garnelen, grünen Salaten, Jamón, Tarte mit Kürbis und Ziegenkäse.
