Die Rehabilitierung der oft missverstandenen Rebsorte Mavrodaphne. Ein Wein produziert aus einem nordseitig ausgerichteten Einzellagen-Weinberg mit kühlem Klima (0,3 ha), der 2006 im Dorf Vrosthena in den Bergen von Aigialeia gepflanzt wurde. Die Reben wachsen auf Ton-, felsigen und kalkhaltigen Böden in 915 Metern Höhe und liefern geringe Erträge von hochwertigem Traubenmaterial mit ausgeprägter Säure. Klassische Rotweinbereitung mit spontaner alkoholischer Gärung. Es wird ausschließlich der Vorlaufwein verwendet, der 12 Monate in einem 15-Hektoliter-Foudre aus französischer Eiche gereift wird. Unfiltriert und ungeschönt abgefüllt, mit minimaler Schwefelzugabe. Ein trockener Rotwein mit tiefroter Farbe und leuchtenden violetten Reflexen. Elegante Aromatik von Veilchen, dunklen Beeren, Lakritze und Gewürzen. Am Gaumen zeigt er sich mit festen, herzhaften Tanninen, bemerkenswerter Länge, Tiefe und Ausgewogenheit.
Speiseempfehlung: Tuna Tataki, Pappardelle mit pürierten Auberginen, geräuchertem süßen roten Pfeffer und Walnüsse, gegrillte Schweinekotolett.
