Sauvage Bleu 2021 BIO

Hand-picked Limniona grapes were destemmed and gently macerated whole in stainless steel tanks for seven days before the fermenting must was transferred to amphorae and oak barrels. After six months of aging in oak, the wine was bottled unfined and unfiltered. A rare and fascinating expression of the Limniona grape variety – only 1,100 bottles were produced. Sauvage Bleu reveals the wild, profound side of this Greek grape: aromas of wild berries, herbs, leather, and delicate spices unfold in the glass. On the palate, it is silky yet structured, with a medium to full body, lively acidity, and a long, mineral finish. Elegant and untamed: a vibrant wine.

Food recommendation: Charcuterie platters, chickpea stew with cumin and smoked paprika, mushroom tart, duck breast with pomegranate or cherry glaze

Domaine Ligas, a small family winery in Greece, has operated according to the principles of biodynamic viticulture and permaculture since its founding.
