Bucephale 2020 BIO
Bucephale is the powerful yet elegant Xinomavro. A wine with character and depth – natural, authentic, and deeply rooted in its origin. The vines are grown organically according to permaculture principles, the grapes are hand-harvested, gently destemmed, and spontaneously fermented as whole berries for three weeks – without pumps, without intervention, using only the wine's own wild yeasts. After fermentation, the wine matures for twelve months in neutral Stockinger oak barrels from Austria and then for another year in the bottle. In the glass, Bucephale reveals notes of sun-dried tomato, black olives, herbs, red fruits, and delicate spices. On the palate, it is vibrant, earthy, and structured, with soft tannins and a long, spicy finish. A natural, expressive Xinomavro that perfectly reflects the philosophy of Domaine Ligas – artisanal, vibrant, and full of energy.
Food pairing suggestion: Oven-baked lamb with herbs and olives, game dishes, mushroom ragouts, Manchego Curado or Parmigiano Reggiano
