Olla Blanc

Perfect for those seeking characterful, unadulterated white wines with natural freshness and floral aromas. A vibrant orange to copper color with characteristic, natural cloudiness. The nose is expressive yet delicately fragrant. No overpowering aromas, but rather an elegant, almost weightless cloud of scent. Notes of elderflower, grapefruit juice and zest, nutmeg, mango, papaya, and pineapple are reminiscent of fresh aromatic hops. Apricot and mirabelle plum are also present – all light and playful, almost like a sparkling summer lemonade. On the palate, this natural wine is lively, with fresh acidity and a juicy, easy-drinking character. The extended maceration lends it grip, structure, and a subtle, tart depth – accompanied by delicate tannins, licorice, citrus zest, and a pronounced salinity on the finish. Despite its low alcohol content of 10.5% ABV, it doesn't feel light, but rather carries its minerality with a floating elegance.

Food recommendation:

Sautéed calamari in a honey-curry glaze with fresh lemon juice – the sweet and spicy marinade accentuates the exotic and fruity aromas of the wine.

Deep-fried roe from large fish – crispy on the outside, creamy and intense on the inside. Its tart, salty depth forms an exciting contrast to the fragrant, fruity notes of the wine and highlights its mineral freshness.

Matassa

Domaine Matassa was founded in the early 2000s by Tom Lubbe, a native South African and former cellar master at the renowned Domaine Gauby. Early on, he recognized the enormous potential of the wild, rugged landscape around Calce in the Roussillon region and acquired old, sometimes high-altitude vineyards with unique terroir. Instead of traditional winemaking techniques, Lubbe now pursues a radically purist and natural style: low alcohol, high tension on the palate, spontaneous fermentation with natural yeasts, no fining, no filtration. His wines are precise, cool, vibrant, and full of energy – with impressive aging potential. But Lubbe's work extends far beyond mere winemaking. He is one of the most influential figures in the natural wine movement in Europe. Always in dialogue with the times, climate change, sustainability, and the deep connection between people, vines, and nature, his approach represents a conscious and responsible wine philosophy. His wines, crafted with minimal intervention, clear origin, and intense expressiveness, serve as role models for a new generation of winemakers worldwide who are forging new paths in viticulture. Domaine Matassa is today synonymous with the new, natural style of the South – characterized by character, authenticity, and visionary thinking.
