Particules Crayeuses Extra Brut Grand Cru Blanc de Blancs from Waris-Larmandier is a precise, terroir-driven Champagne made from 100% Chardonnay sourced from old vines in the Grand Cru villages of Chouilly, Cramant, Avize, Oger and Le Mesnil-sur-Oger in the Côte des Blancs. The vineyards are farmed organically and biodynamically, and the cuvée combines a single-vintage base (predominantly 2017) with around 20% reserve wine from a solera started in 2013, adding depth and complexity.
Fermentation takes place with indigenous yeasts, about 40% in used 600-litre Burgundy barrels and 60% in stainless steel, followed by spontaneous malolactic fermentation and 24–36 months ageing on the lees in bottle. Disgorged with zero or very low dosage (effectively Extra Brut / near Brut Nature) and an alcohol content of 12% vol., this Blanc de Blancs offers an ultra-pure, chalk-inflected expression of its Grand Cru terroir.
On the nose, Particules Crayeuses reveals notes of lemon zest, candied citrus, green apple and white flowers, framed by chalky, almost iodine-like nuances and a hint of fresh bread and cream. The palate is taut and tactile, with a fine, persistent mousse, crystalline acidity and a pronounced chalky minerality that gives the wine a vertical, saline profile and a long, precise finish. This Champagne is an ideal partner for oysters, crudo, sashimi, elegant fish dishes or simply as a contemplative aperitif for lovers of focused, mineral-driven Blanc de Blancs.
