🍷Wine of the Week - Champagne Chavost Blanc Assemblage Brut Nature | An ode to harvest
Since 1946, Champagne Chavost has been crafting authentic Champagne in Chavot-Courcourt, Épernay, guided by the values of its founders: solidarity, respect, and love for the land. Generations of passionate winemakers have tended the vines with care, producing Champagnes that reflect both the unique terroir of Chavot-Courcourt and a strong commitment to sustainability.
The Blanc Assemblage Brut Nature is a true tribute to the harvest. On the label, you’ll see workers dancing under the sun, baskets overflowing with grapes, and glasses ready to be filled. The hand-picked grapes—50% Chardonnay and 50% Meunier from the first pressing—are grown with reasoned viticulture (Viticulture raisonnée) and fermented spontaneously with indigenous yeasts, without any added sulfites. No fining, no acid adjustments—every bottle reveals the pure character of this sustainable Champagne.
On the nose, this Champagne Chavost Blanc Assemblage offers vibrant aromas of red fruits, caramel, and subtle buttery notes. On the palate, it is full-bodied yet supple, with perfect balance and structure.
Why we love it: It embodies pure joie de vivre, whether you’re enjoying a brunch, a festive celebration, or a quiet moment of indulgence.
Food Pairing: Pairs beautifully with sushi, tuna tartare, delicate charcuterie, goat cheese, butter, or fresh croissants.
Ok, I admit it—I’m going to make a guanciale carbonara and enjoy a glass. Some moments in life simply deserve Champagne.
