The blend of Xinomavro, Krasato and Stavroto is mixed with the wild yeasts fermented and stored in old oak barrels for 12 months. It s bottled unfiltered and without the addition of sulfites.
In the glass it is a medium ruby red with garnet reflections. In the nose we find the characteristic aromas of the Xinomavro grape variety like tomato paste and olives. This is followed by aromas of juicy cherries, sour cherries, strawberries and herbs such as eucalyptus, rosemary and black tea. Echoes of plum, cranberry, nutmeg, cedar, leather and violet as well cigar and cocoa.
On the palate a medium body, crispy acidity and rich but juicy tannins. The flavors are riper here. Dried cranberries, strawberries, cherries, violets, sun-dried tomatoes, olive leaves, rosemary, tea, dark chocolate and a lovely long finish.
