Apostolos Thymiopoulos has been considered one of the best producers in Naoussa for several years - where he works exclusively with the Xinomavro grape variety. In the Rapsani region on Mount Olympus at an altitude of 400m -600m, 10km from the Aegean Sea, he started a new project together with Konstantinos Liapis. Some vineyards are 15-35 years old and some are 40-70 years old and they have been cultivated organically on slate soils since they were planted. An exciting combination that reflects exciting wines.

All grape varieties are harvested at the same time and fermented spontaneously and they spend 14
Months in 500L barrels. The wine is unfiltered and with little sulfur bottled. Elegant aromatic character of fresh black fruits with hints of floral and herbal notes. On the palate it is versatile and balanced between the luscious mouthfeel and the refreshing acidity. The tannic structure is robust, yet silky and round. The aftertaste is long and complex.
