The winery was founded in 1985 by Thomas Ligas, who had already worked experimentally on the vineyard and in the winery and had focused on organic farming since the 1990s. Since 2007, cultivation has been based on the principles of permaculture, a holistic approach to cultivation that is key to the viability and sustainability of an ecosystem. The work in the winery and vineyards is done by the children Melanie and Jason, who are pioneers in the natural wine scene in Greece and produce wines with a special character in limited quantities:
Xi-Ro 2020 ORGANIC
It has a medium ruby red color with violet reflections. Aromas of tomato, strawberry, cherry and cranberry intertwine with intense herbal notes. Nuances of rosemary, lavender and tobacco create a unique taste landscape. On the palate it has a medium body, crisp acidity and intense but polished tannins. Juicy red fruits such as strawberry, pomegranate, cherry and cranberry are framed by notes of herbs, tomato, leather and tea.
