A lesser-known Greek grape variety, presented here with rich texture, concentration and balanced acidity. Kydonitsa is an indigenous Greek variety that has made a strong comeback in recent years. Ktima Ligas’s approach to winemaking shows that it can go beyond its enticing, playful aromas and take on another dimension – with structure, depth and complexity.\u003c\/p\u003e\n\u003cp class=\"my-2 [\u0026amp;+p]:mt-4 [\u0026amp;_strong:has(+br)]:inline-block [\u0026amp;_strong:has(+br)]:align-top\"\u003eThe grapes are destemmed, and the whole berries remain in contact with the juice for seven days in a stainless steel tank, allowing for gentle extraction. Fermentation takes place at 17–18°C. The still-fermenting juice is then transferred to 400-litre Austrian oak barrels. The wine ages in the same barrels on its lees for six months.\u003c\/p\u003e\n\u003cp class=\"my-2 [\u0026amp;+p]:mt-4 [\u0026amp;_strong:has(+br)]:inline-block [\u0026amp;_strong:has(+br)]:align-top\"\u003eIn the glass, it shows a deep lemon colour with orange highlights. On the nose, citrus fruit, candied lemon peel and peach combine with quince, apricot and notes of beeswax. The palate is full-bodied, with fresh acidity and a long finish. Peppery notes and salinity add another dimension.
